Sweet Potato and Butternut Squash Soup

A yummy warming soup perfect for those chilly autumn days.

  • Large cooking pot or sauces pan
  • Blender


  • 1 Large Butternut Squash
  • 2 or 3 Sweet Potatoes
  • 1 Onion
  • 2 Cloves of Garlic
  • 2 Pints Stock of Choice Mine was chicken
  • Salt and Pepper to taste


  • Peel and cut up the squash and potatoes into dice sizes pieces
  • Soften the onion in some oil with the garlic
  • Add in the Squash and Potatoes and cook for 5 minutes.
  • Add in stock and leave to simmer for an hour until veg is soft
  • Take off heat and leave to cool slightly
  • Blend up and serve with crusty bread!
