Sweet Potato and Butternut Squash Soup
A yummy warming soup perfect for those chilly autumn days.
- 1 Large Butternut Squash
- 2 or 3 Sweet Potatoes
- 1 Onion
- 2 Cloves of Garlic
- 2 Pints Stock of Choice Mine was chicken
- Salt and Pepper to taste
Peel and cut up the squash and potatoes into dice sizes pieces
Soften the onion in some oil with the garlic
Add in the Squash and Potatoes and cook for 5 minutes.
Add in stock and leave to simmer for an hour until veg is soft
Take off heat and leave to cool slightly
Blend up and serve with crusty bread!
